CORN FRITTERS
This is a dish I love eating in the summertime when corn is at its peak. These go great with a cast iron steak or just eat them by themselves for an appetizer.
Ingredients
- 4-5 ears corn 
- 1 heaping tbsp flour 
- Salt and pepper to taste 
- 2 yolks, whites reserved 
- 1 tsp sugar 
- 2 tablespoons canola oil or another neutral oil for frying 
makes 10-12 fritters
Cut kernels off corn and milk add to a bowl with flour, salt, pepper, yolks and sugar
Whip egg whites until stiff and fold into corn mixture.
Preheat oil in a cast iron skillet over medium heat. Drop fritters by the tablespoon into the oil. Don’t press down. Cook for about 1 minute on each side until golden brown and crispy.
