DEVILED EGG TOAST
Ingredients
- 8 hard boiled eggs. Minced 
- 2 tablespoons cheddar, grated 
- 2 tablespoons chives, minced *reserve some for garnish 
- ½ cup mayo 
- 2 tablespoons stone ground mustard 
- 4 slices thick cut smoked bacon, cooked, drained, and chopped *fat reserved 
- 1 teaspoon kosher salt 
- 1 teaspoon fresh cracked black pepper 
- 2 pieces multi grain, sliced and toasted lightly in olive oil 
- 2 breakfast radishes, chopped 
Makes 3-4 servings
Put eggs, cheddar, and chives in a mixing bowl and set aside.
Mix together mayo, mustard, and 2 tablespoons reserved bacon fat in a mixing bowl. Season with salt and pepper and add to egg mixture.
Spoon mixture on top of toasted bread and cut into 3 pieces
